The sauce comes in two flavors, sweet and salty. It is a kind of paste produced by homogenizing fruits, vegetables and various materials to obtain a fluid structure in order to change the aesthetic and taste perception of the food used while being used alongside meals and desserts.

Sauce Types are divided into Salty and Sweet. The salty sauce group generally includes Ketchup, Mayonnaise, Mustard, Barbecue Sauce, Hot Sauce, Ranch Sauce, Cheddar Sauce, Sweet-Sour Sauce, etc. sauces, while fruit sauces constitute the Dessert sauce group.

Salty Sauce production is divided into two as Hot Process and Cold Process. While the Hot Processes cook the product under vacuum according to the needs of the sauce by being heat treated by means of steam, hot water or hot oil passing through the jacket of the process machine used, there is no need for heat treatment in the Cold Process. While the product is processed in the same process machine, the product is prepared by means of cold water in the jacket of the machine. Mayonnaise, Ranch Sauce etc. while products need Cold Process; Ketchup, Barbecue Sauce, Mustard, Hot Sauce etc. sauces are Hot Process products.

In the production of Sweet Sauce, the fluidity and structure of fruit sauces determine the type of fruit sauce. While more solid and dark fruit sauces enter the marmalade type, more fluid and liquid fruit sauces enter the sauce type. Jam & Marmalade Production Line is needed for dark fruit sauces.

All sauces in the Sweet-Salt Sauce and Hot-Cold Process groups can be produced on the same process line.

Appetizers with sauce consistency should not be confused with the general structure of sauces. The Sauce Process Line is not suitable for appetizer production.
